Gelato is more temperature-sensitive than ice cream. Store it right and you get a silky, intense scoop every time. Store it wrong and you get ice crystals. Here is exactly what to do.

The basics: freezer temperature

Store gelato at -18°C (0°F)or colder. This is the standard freezer temperature on most home freezers. If your freezer has a dial, set it to the coldest setting that does not freeze-burn your other food. Consistency matters more than the exact number — temperature fluctuations cause ice crystals to form and grow.

Avoid storing gelato in the freezer door. The door is the warmest part of the freezer because it opens and closes. Keep pints at the back or bottom of the freezer where temperature is most stable.

How long does gelato last in the freezer?

Properly stored at -18°C, gelato maintains best quality for 2&#82134 weeks. After that, texture gradually degrades as ice crystals form and the flavour dulls. The gelato is still safe to eat beyond 4 weeks, but the experience will not be what the maker intended.

Small-batch gelato made without artificial stabilisers — like Birb's — has a shorter optimal window than mass-produced gelato. Eat it within 2 weeks for the best experience.

How to serve gelato

Gelato is served slightly warmer than ice cream, typically at -12 to -14°C. In practice:

  • 5&#821310 minutes before serving, take the pint out of the freezer and let it sit at room temperature. This softens the gelato just enough to scoop cleanly.
  • Do not microwave. Microwaving melts gelato unevenly and destroys the texture. Patience is the only tool.
  • Use a warm scoop. Dip your scoop or spoon in warm water, shake off the excess, then scoop. The warmth helps the gelato release cleanly.
  • Return the pint to the freezer immediately after scooping. Do not let the whole pint soften.

What to do if gelato melts

If gelato has softened slightly but is still cold, return it to the freezer immediately. It will firm up, though some texture loss is expected.

If gelato has melted completely (liquid or near-liquid), do not refreeze it. Refreezing melted gelato produces large ice crystals and a grainy, icy texture that will not recover. Instead, use it as a sauce over cake or brownies, or blend it into a milkshake.

Preventing freezer burn

Freezer burn happens when air reaches the gelato surface and causes dehydration. To prevent it:

  • Keep the lid on tightly when storing.
  • Press a piece of parchment paper or plastic wrap directly onto the gelato surface before replacing the lid for long-term storage.
