THE STORY
Dark chocolate gelato layered with in-house pistachio kataifi cream
Pistachio Kunafa is our take on the Middle Eastern dessert, kunafa. We toast kataifi pastry until it shatters, fold it into a cream made from single-origin Iranian pistachio paste, and layer it through a dark chocolate gelato base. Churned in small batches in our Singapore studio, it's the dessert in a pint.
KEY INGREDIENTS
Iranian pistachio paste, kataifi pastry, dark chocolate, fresh milk, cream, sugar. No artificial colours or flavours.
WHY IT'S DIFFERENT
Most pistachio gelato is a flat paste. Ours has texture—crisp kataifi shards that stay crunchy inside the cream ribbon, against a bitter-dark chocolate base. It's the dessert, in a pint.
